For The Sauce

    • 85g Butter
    • 3/4 Cup Sugar
    • 1 Cup Heavy Cream
    • 1 Tsp Pure Vanilla

The Steps

Instructions:

    1. Preheat your oven to 180 deg Celcius, beat 1 cup sugar, 1 egg, 1 tbsp butter & 1 tbsp apricot jam until fluffy.
    2. Sift 160g cake flour and 1 tsp bicarbonate of soda and beat into batter, along with 1 cup of milk, 2 tbs white vinegar and 2 tsp pure vanilla. Mix well.
    3. Pour batter into buttered baking dish & bake for 20-25 mins until evenly golden brown.
    4. Place your sauce ingredients, 85g butter, 3/4 cup sugar, 1 cup heavy cream and 1 tsp pure vanilla into a sauce pan and simmer until sugar disolves.
    5. Once your pudding is cooked, remove from the oven and little by little pour the sauce over the pudding, allowing the sauce to soak through before ading a little more. Be patient with this as pouring too quickly will result in dry spots in your pudding.
    6. Serve Malva Pudding hot with either custard, fresh cream or ice-cream.
